dough sticks to it
I bought this because I was struggling to make my eclair shell straight and uniform. This mat helped me to overcome these two issues BUT the dough sticks to it. So you have to peel off each choux really carefully. They still stick to this mat. The same dough I bake on Silpat does not stick.
If you bake with these mats without make them too fat, the choux fit nicely to the paper liner I got from this site. Overall, it's a good product, especially for someone like me who is trying to perfect eclair.
