Martellato Polycarbonate Chocolate Mold, Flora by Javier Guillen
A line of molds born from the collaboration between Martellato and an internationally renowned Pastry Chef to create VIP pralines.
Each mold tells a real story inspired by the country, culture and personality of the Pastry Chef. In this case, the Flora polycarbonate mold , signed by Javier Guillén, was inspired by the flowers that flood the Spanish gardens.
Javier Guillén began his career working with Ferran Adrià (3 * Michelin), and then continued with numerous high-level experiences around the world, such as at Oriol Balaguer Tokyo, El Bulli and Catering Tentation. He too worked for Pierre Hermé, before joining Valhrona. He gives masterclasses and consultations all over the world.
