What pizzelles are to Italy, krumkakes (a.k.a. crumble cookies) are to Scandinavia. Crisp and light, krumkakes are left flat or rolled into cones (while still warm and supple) and dredged with sugar or given a filling of fruit or ice cream or whipped cream.
This so-called iron is made of cast aluminum and comprises a base and a hinged cookie press, the two surfaces of the press engraved with a center pattern encircled by a wreath of leaves.
Before using the iron, apply a light coating of oil with a pastry brush.
To use, place the iron with its base on a gas- or electric-range fire. Preheat the press in the holder, then drop a teaspoon of batter on the lower part of the iron. Shut the iron gently and keep on the fire for five to ten seconds, then turn the iron over and repeat on the other side. For the last step, remove the cookie and roll it around the wooden cone (included) while the cookie is still warm and flexible.
