What's the highest temperature that can be used when baking with these pans?
We recommend that you bake at a lower temperature because our pans tend to heat up faster, due to the fact that the metal is even all the way through. We don't have any thick or thin areas due to stretching the metal as many pans have. After anodizing, there no pits in the metal. Again, this results in more even baking. Cakes baked on a lower heat tend to be a better crumb and texture. Lower and slower is a good rule of thumb when baking in general. So our pans heat faster and cool quicker than most, for the same reasons listed above. We are a much better, well rounded pan.

Is the pan dishwasher safe?
Hand wash; the dishwasher will ruin the finish. It would be still safe to use, but will not look the same.

Can I use a cooking spray, or do you recommend butter and flour?
You can use a spray as long as it does not include olive oil. We recommend Baker's joy or butter and flour.

Do I need to wash the pan before I use it?
Yes, wash the pan prior to first use.

Quality all the way around this pan I reviewed the 10" now the 9". The bottom rim does make water bath usage a little problematic if you are used to wrapping the pan with foil. I purchased a 14x3 round to handle the 10 and smaller pans. I still wrap with foil but use the wider heavy duty foil. I'm sold on a water bath for the recipe I use a more creamy textured cheesecake. No cracks though. This pan is nice and it has a lemon wafer crust baked in it right now for a 9" lemon curd cheesecake. The quality of this brand is great and I have numerous sizes of round x 3" but only the 9" and 10" springform. I find no fault with them. Please hand wash though. Caustic dishwasher soap will discolor aluminum pans.

The perfect pan I got this 9 pan because I was happy with the quality of two 8 pans that I got before. There well made. Aluminum means they cook evenly and stick less than other pans without having to have the problems of scratched up Teflon. This pan is solidly made and doesn't leak.
