Perfect Baking for Mini Pies and Tarts This little three inch diameter gem was a great find. I baked several mini strawberry pies in these cups. I was initially concerned about the prebake of the pastry. However, the baking cups held up beautifully with a little parchment lining and some pie weights. Even after baking with the juicy strawberry filling and the struesal topping - the sides did not fall down. I do think that pre-baking the crust helped. The pies turned out beautifully, tasted great and became a best selling crowd-pleaser.
