Pumpkin Puff Pastries

 

Prep Time: 15- 20 minutes
Cook Time: 12–13 minutes

Yield: 9 pastries

 

Ingredients

For the Pastry:

  • 18 pre-cut puff pastry squares (found in the frozen aisle)
  • 1 large egg, whisked (for brushing)
  • 1 tablespoon cinnamon sugar

For the Filling:

  • 3/4 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons brown sugar
  • 2 tsp pumpkin spice seasoning

Instructions

Prepare the Filling:

  1. Combine the pumpkin puree, egg, brown sugar, cinnamon, nutmeg, ginger, and salt in a small saucepan over low heat. Cook the mixture for about 5-6 minutes, stirring frequently, until it thickens slightly. Remove from heat and let cool.

Assemble the Hand Pies:

  1. Place half of the puff pastry squares on a baking sheet lined with parchment paper or a silicone mat.
  2. Add about 1 tablespoon of the cooled pumpkin filling to the center of each square.
  3. Brush the edges of each pastry with egg wash.
  4. Top each filled square with another puff pastry square. Use a fork to gently crimp and seal the edges.

Decorate and Bake:

  1. Brush the tops of each hand pie with the egg wash.
  2. Sprinkle with cinnamon sugar. Use a knife or scissors to score each pastry.
  3. Bake at 375°F (190°C) for 12–13 minutes, or until golden brown and puffed.
