Pumpkin Puff Pastries

Ingredients
For the Pastry:
- 18 pre-cut puff pastry squares (found in the frozen aisle)
- 1 large egg, whisked (for brushing)
- 1 tablespoon cinnamon sugar
For the Filling:
- 3/4 cup pumpkin puree
- 1 large egg
- 2 tablespoons brown sugar
- 2 tsp pumpkin spice seasoning
Instructions
Prepare the Filling:
- Combine the pumpkin puree, egg, brown sugar, cinnamon, nutmeg, ginger, and salt in a small saucepan over low heat. Cook the mixture for about 5-6 minutes, stirring frequently, until it thickens slightly. Remove from heat and let cool.
Assemble the Hand Pies:
- Place half of the puff pastry squares on a baking sheet lined with parchment paper or a silicone mat.
- Add about 1 tablespoon of the cooled pumpkin filling to the center of each square.
- Brush the edges of each pastry with egg wash.
- Top each filled square with another puff pastry square. Use a fork to gently crimp and seal the edges.
Decorate and Bake:
- Brush the tops of each hand pie with the egg wash.
- Sprinkle with cinnamon sugar. Use a knife or scissors to score each pastry.
- Bake at 375°F (190°C) for 12–13 minutes, or until golden brown and puffed.
