Dubai-Inspired Bar Croissant

Yield: 3 Dubai Chocolate Bars
Ingredients:
- 4 Large croissants
- Callebaut Milk chocolate chunks or any brand of couverture chocolate.
- Filo dough: About 2 cups shredded and chopped, for 4 large croissants
- Butter: 6 tablespoons
- Pistachio praline or pistachio cream: About 16 oz, enough to drench the filo dough.
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Prepare the Filling: Heat 6 tablespoons of butter in a pan.
- Once the butter is melted, add the shredded and chopped filo dough to the pan.
- Stir and cook the dough until it becomes golden brown.
- Remove from heat and transfer the filo dough to a bowl.
- Add pistachio praline or pistachio paste to the filo dough. Use enough to fully drench the dough in the cream; we used 16 oz.
- Prepare croissants by delicately slicing them open, creating a perfect sandwich-ready base.
- Place croissants onto a baking sheet & crisp in the oven for 5 minutes.
- While our croissants are crisping, let’s melt our chocolate in the microwave or over a double boiler until liquid-smooth.
- After crisping, place two scoops of filling into each croissant and spread evenly.
- Brush Chocolate onto the top half of each croissant using a silicone brush. Allow the chocolate to harden.
- Drizzle with couverture white chocolate & top with crushed pistachios & gold foil.
