Dubai-Inspired Bar Croissant

This croissant is layered with a delicious crunchy flaky pistachio filling. This treat will be sure to satisfy your taste buds & with just a few steps you can make it at home!

Total time: 1 hour and 20 minutes

Yield: 3 Dubai Chocolate Bars

Ingredients:

  1. 4 Large croissants
  2. Callebaut Milk chocolate chunks or any brand of couverture chocolate.
  3. Filo dough: About 2 cups shredded and chopped, for 4 large croissants 
  4. Butter: 6 tablespoons
  5. Pistachio praline or pistachio cream: About 16 oz, enough to drench the filo dough.

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Filling: Heat 6 tablespoons of butter in a pan.
  3. Once the butter is melted, add the shredded and chopped filo dough to the pan.
  4. Stir and cook the dough until it becomes golden brown.
  5. Remove from heat and transfer the filo dough to a bowl.
  6. Add pistachio praline or pistachio paste to the filo dough. Use enough to fully drench the dough in the cream; we used 16 oz.
  7. Prepare croissants by delicately slicing them open, creating a perfect sandwich-ready base.
  8. Place croissants onto a baking sheet & crisp in the oven for 5 minutes.
  9. While our croissants are crisping, let’s melt our chocolate in the microwave or over a double boiler until liquid-smooth.
  10. After crisping, place two scoops of filling into each croissant and spread evenly.
  11.  Brush Chocolate onto the top half of each croissant using a silicone brush. Allow the chocolate to harden.
  12. Drizzle with couverture white chocolate & top with crushed pistachios & gold foil.
