Description

  • Lift cutting mat: the pieces of dough remain beneath in the shape of cookies, ready to bake
  • Made of food grade plastic

For advice on removing the dough with ease from this sheet after cutting--a challenge with shortbread dough, which tends to be sticky--some expert French chefs who specialize in bread were consulted. They recommend that the dough be very cold when cut. Flour can also help: fill a sheet pan with flour, then press the cutter sheet in the flour, shake off the excess, then cut the dough.

Wanted to love this. After cutting the cookies you have to pick all the dough out of the back and re-roll. Not the time saver I was looking for.
