Work with Silpat on a flat surface with the smooth side facing up (Silpat logo up). Check to ensure that the baking mat is dry and clean before placing any patisserie upon it.
De-panning
After the baked pastries have cooled, remove them one by one or by gently lifting the Silpat to let them roll off.
Care and Maintenance
Wipe the Silpat with a damp sponge after each use to remove crumbs or particles. If washing is required, lay the Silpat in the sink and run warm water over the surface. Use a Demarle-approved detergent or a mild soap with a soft sponge to clean the surface. Do not use any scrapers or hard brushes for cleaning Silpat. Shake off excess water and hang or lay flat on surface to dry.
Storing
Store the Silpat flat on a tray, hang it up with a clothing pin, or roll it up. Do not fold or place heavy objects on top of the rolled Silpat.

- Never cut or use sharp objects on the surface.
- Do not fold or store in a folded position.
- Do not grease.

Are the silpats NSF Approved?
Yes they are
Will the Silpat-1 fit in a home oven?
No they will not. A home oven depth is 16". The Silpat-1 needs a sheet pan that is 17" or more, therefore it will only fit in a commercial size oven. If you would like to use a silpat at home, the Silpat-2 would be perfect.
Can I use a silpat as protection between my cast iron pan and a glass-top flat range stove?
Not recommended (though Demarle is inventing a product for that use). Although the heat is transmitted through induction and thus indirect, it's still best avoided in use with Silpat, to stay on the safe side.
What are the Warranty Condition on the Baking Mats?
The Warrantry for this silpat Baking Mat is 2 Years but is voided if used at temperatures above 480 degrees, or is used cutting on using a sharp metal knife or utensl,
Can I Broil Fish / Streaks if you set Broil to 480 or lower?
Silpat (The manufacturer) recommends not to Broil on these mats and also Recommend keeping the temperatures below 450

Are these Mats Good for High Altitude Baking?

High altitude should not make a difference in the performance of the slipat Mat.
we would recommend at least fo rthe 1st time to use an uncoated sheet pan under it so the bottom shouldn't burn as fast as it normally would. Because of the naturally reflective surface that provides even heat dispersion and more controlled baking
Can I Use this Mat for Baking Bacon. (Pans Get Greasy and end up with hard work to clean)?

Great Idea Since the silpat could fit inside a cookie sheet, However the grease would get under the silpat and you'd have a greasy pan AND a greasy silpat and that would just give you something else to wash.
Our best recommendation is to use a disposable foil or parchment that wraps or is somewhat bigger then the pan / sheet.
