Not durable
The baffle for Chocovision tempering machines contains a temperature probe that is not very durable. You have to be very careful not to submerge the probe in water, and not to use water that is too hot. I had to purchase a new baffle after less than a year of minimal usage, about 2 times per week. At more than $100 a pop, that is not very cost effective.
